🌸 Mother’s Day Muesli with Avocado Oil & Spiced Pear Juice
🛒 Ingredients:
1 cup sunflower seeds
1 cup pumpkin seeds
1/2 cup chia seeds
1/2 cup sesame seeds
1/4 cup crystallised ginger, finely chopped
1/4 cup almond slivers
1 cup coconut chips
Liquid Flavour Mix:
1 tbsp apple syrup (or maple syrup if preferred)
3 tbsp The Avo Keeper avocado oil
1 tsp vanilla extract
Up to 1/2 cup pear poaching juice* (add gradually)
*Juice made from pears poached in water with star anise and a cinnamon stick – beautifully aromatic and gently sweet.
👩🍳 Method:
Preheat oven to 190°C fan bake. Line a large baking tray with baking paper.
In a large bowl, combine all dry ingredients — seeds, ginger, almonds, and coconut chips.
In a small jug, mix together the avocado oil, syrup, vanilla, and pear juice.
Slowly drizzle the liquid into the dry ingredients a little at a time, stirring thoroughly between additions. You want everything coated but not soggy — the mix should still feel light and airy.
Spread evenly on your baking tray.
Bake for 4–6 minutes at a time, up to about 30 minutes in total, stirring gently each time to ensure even toasting. Watch closely — seeds and coconut chips can burn quickly at this heat.
Once golden and crisp, remove and allow to cool completely. It will crisp up further as it cools.
